Foris Sage Sausage Stuffing

Ingredients:

  • 1 pound Foris Sage Sausage, casings removed

  • 16 cups dried bread cubes

  • 1 1/2 cup onions, diced

  • 1 cup celery, diced

  • 1 1/2 cup chicken stock

  • 1 stick butter

  • 1 tablespoon salt

  • 1 teaspoon pepper

  • 1 tablespoon fresh sage, chopped

  • 1 teaspoon dried thyme

  • 2 tablespoons chopped flat-leaf parsley

  • 2 Granny Smith apples, unpeeled, large dice

  • 1 cup dried cranberries

  • 1 cup roasted pecans (optional)

Instructions:

  1. Preheat oven to 350°. 

  2. Place the dried bread cubes in a large mixing bowl. 

  3. In a large saute pan, melt the butter then saute the veggies, apples, salt, pepper, parsley, sage, and thyme over medium heat for 10-12 minutes until softened.  Add mixture to the bread cubes. 

  4. Remove the casings of the Foris Sage Sausage, and cook over medium heat for 10-12 minutes, until cooked through, breaking up sausage while cooking.  Add it to the bread cubes, veggies and apple mixture.  Add chicken stock and cranberries, and mix thoroughly. 

  5. If adding, mix in roasted pecans at this point. 

  6. Pour into prepared 9x13 greased dish, and bake for 30 minutes until golden brown and warmed through.
